How different is 除了 from 以外? Or perhaps I think I've seen them be used in tandem to form 'other than' sentences.

除了 is used at the beginning of a sentence/phrase and 以外 at the end, often combined with 除了. Check some example sentences in Pleco or 有道 for a better idea.
