A bit thrown off by the ordering here.
-What is the function of 的?
- is 爱都 backwards? Why is 'dou' after 'ai'?

Am I understanding the literal translation correctly - every parent for their children loves every deeply?

Mandarin Blueprint

The 的 here is showing who the love is for/belongs to. In this case, it's the love for their child(ren). Not dog (对狗的爱), not their money (对钱的爱), but children.
都 is referring to "all parents", it's not directly connected to 爱. If you swapped the two characters around the sentence wouldn't work.

The sentence translates to "Every parent's love for their child(ren) is deep"/"Every parent has a deep love for their child(ren)"
