Usage 1 - "these, this (plural)": 

Sentence:

这些钱是你这个月的薪水。

English:

This money is your salary for the month.

Top-Down Words:

钱 qián - money
薪水 xīnshǔi - salary


Sentence:

这些人很会唱歌。

English:

These people can really sing.

Top-Down Words:

唱歌 chànggē - to sing


*Sentence:

如果父母都不白,那这些宝宝一定不会白。

English:

If the parents are not fair-skinned, then these babies will not be fair-skinned.

Top-Down Words:

如果 rúguǒ - if
都 dōu - all, every

Why in some of the pronunciations does 这 sound like 'Jay' instead of the French word for me (Je) or Pleco's pronunciation?

那边, in this example from a few lessons ago, same question. In our Anki decks they make it sound like 'nay'.

白人 can mean white people.
Can it also refer to a non-white person who is fair skinned?

It's used exactly the same as the English "White", which can be both objective and subjective.
