Usage 1 - "class (in school)": 

Sentence:

我有许多课。 

English: 

I have a bunch of classes.

Top-Down Words:

许多 xǔduō - many, very many


Sentence:

我喜欢上中文课。

English: 

I enjoy going to Chinese class. 

Top-Down Words:

喜欢 xǐhuān - to like


*Sentence:

我们的课不少。 

English: 

We have quite a few classes.

( Just for the sake of using 的)...Would it be correct to also say 我喜欢上中文的课 ?

Following up on the video, in this sentence:
我喜欢上中文课。
so does the 上 go with 喜欢 (喜欢上 - starting to like) or with 中文课 (上中文课 - going to Chinese class), or could it be either depending on context?
I knew 爱上 but 喜欢上 was new to me so I initially interpreted this as 'I like going to Chinese class.'

Good catch, yes, it could be either! 喜欢上 is like "come to like," so if you break it down as 我·喜欢上·中文课 it would mean "I've come to like Chinese classes." It's a bit more straightforward to say "I like going to Chinese class 我·喜欢·上中文课," but either are correct grammatically.
