In this sentence, 我出现在妈妈面前, should it be 面前 or 前面? Are they interchangeable?

Not quite:
In 面前, “面" means "face," so 妈妈面前 means "in front of mom's face."
In 前面, "面" means "area," so 前面 means "the area in front."
As you can see, they would be interchangeable in many circumstances, but if there is nothing that has a "face" (like the face of a person or face of a building), then 面前 wouldn't work.

下雨过后,天空出现了彩虹。The second part of this sentence feels odd to me because it translates literally as "sky appeared rainbow." I would have thought a preposition/relator would be needed. For example: 在天空出现了彩虹 or 彩虹在天空出现了。But apparently not?
