Usage 1 - "pork": 

Sentence:

在中国,大家都喜欢吃猪肉。

English:

In China, everyone likes to eat pork.

Top-Down Words:

大家 dàjiā - everyone
都 dōu - every, all
喜欢 xǐhuān - to like


*Sentence:

然后我说只吃猪肉的话,长大以后就会长成一只猪。

English:

Then I said if you only eat pork, you will grow up to be a pig. 

Top-Down Words:

成 chéng - to become, to prove to be
就 jiù - (expressing condition “then”)


*Sentence:

我和你一样是人,所以是变不成猪的!

English:

I'm a human being like you so I can't turn into a pig.

Top-Down Words:

所以 suǒyǐ - so, as a result
成 chéng - to become, to prove to be

然后我说只吃猪肉的话,长大以后就会长成一只猪。I see 只 before 猪 at the very end as a measure word for animals like we previously used for a dog, but you had 头 as a measure word specifically for larger animals in sentence 我在门口见到一头猪。哪儿跑出来的?Is is flexible as to which measure word to use?

Correct. I imagine that pigs are on the border between what people think of as small and large animals, hence why they sometimes get 只 and sometimes 头 as their measure words.
