有的人会去中国饭店 - what is the use of 的 in this sentence? Is it to make 有人 a plural?
Mandarin Blueprint
有的 just means "some", most commonly used with the word 人 to mean "some people". It's actually a compound word, athough it seems like the 有 and the 的 are separate.

Is saying 有的人 in 有的人会去中国饭店,然后想自己点菜 simnilar to 有些人, both meaning 'some people'.

So just to further complicate the question, based on this continuum of specificity, would 某些人 fit somewhere between your example of "those three people over there" and 有些人?
Mandarin Blueprint
No real difference between 某些人 and 有些人, other than 有些人 being a lot more common.
