叔叔的鼻子很高。"not 大 when describing noses"
This is going to be tricky. I would have guessed 长 as in English.
It's going to be hard to create a mental image of a tall nose.

多吃还可以长得更高。

Does 长得 imply growing as well? I thought it was just 'to look like'. Is this literally 'You can look taller by eating more'?

Can this also be said with 变得?

Mandarin Blueprint

It entirely depends on what adj you add after 长得. It can be a general description of how something/someone looks or description of how well they've grown:

长得更高 = To grow taller
长得不好 = To grow badly
长得很高 = To be tall
长得很漂亮 = Look beautiful
