猎人没有一刀杀了狼,而是把狼的肚子切开,把奶奶从里面救了出来

1) This must be the brother's grimm version... O.O
2) The first part 猎人没有一刀杀了狼 reads more like 'the hunter did not have a nice to kill the wolf' because of 有. Am I missing something?

No, the 没有 in "猎人没有一刀杀了狼" is a past-tense negation, not an indicator of possession. "The hunter *didn't* kill the wolf in one blow." 刀 is functioning as a measure word for "blows" of a knife.
