Is this as in sticking up for someone or sticking something up something? I found a third option here to add to my slight confusion:

"they had served time for sticking up a store in Akron, Ohio" (as in robbing the store I presume)

(I realise there's the note but I'm still not quite sure what the keyword means)

It means "stick up" like something "sticking up" compared to the rest of its surroundings. For example, some of your hair might be "sticking up" compared to the rest of your hair.
