so if 看病 means to visit a doctor, to see a patient
can one say:
医生看病病人
and
病人看病医生
but I presume it doesn't include visiting a patient by family or friends?

Just 医生看病 or 找医生看病 would be fine!

Sorry, my question was unclear. If it can mean "to visit a doctor, to see a patient", then that implies we can use the verb in both directions i.e. patient visits a doctor, doctor sees a patient.

Ahhh. Yes, that's correct! Although "patient seeing a doctor" is more common usage.
